It's Easter!


Seeing all the cute Easter Eggs online made me feel like decorating my own Easter Egg~ but I think I'll make a mess in the kitchen, and should stick to decorating nails!

Here's a Easter Egg recipe to share~


Ingredients

Original recipe makes 60 eggs

 2 pounds confectioners' sugar
 1/4 pound margarine, softened
 1 (8 ounce) package cream cheese
 2 teaspoons vanilla extract
 12 ounces peanut butter
 1 pound flaked coconut
 4 cups semisweet chocolate chips
 2 tablespoons shortening




Directions

1. In a mixing bowl, combine sugar, margarine, cream cheese and vanilla extract. Divide the batter in half and place each half of the batter in a bowl on its own. Stir peanut butter into one of the bowls and coconut into the second.

2. Using your hands, mold the dough into egg-shapes and arrange the eggs on cookie sheets. Place the eggs in the freezer until frozen.

3. Once the eggs have frozen, melt the chocolate and shortening in the top of a double-boiler. Dip the eggs into the chocolate until coated. Place the eggs on wax paper lined cookie sheets and return to the freezer to harden. After the chocolate has hardened the eggs can be kept in the refrigerator.  * you can also deco with hundreds & thousands before freezing!

Pink Chocolate Chip Cookies ♥

Pink Chocolate Chip Cookies ♥



Ingredients

    1/2 cup (1 stick) butter, slightly softened
    1 (17.5 oz.) pouch Betty Crocker sugar cookie mix
    1/2 cup powdered sugar
    1/2 cup flour
    2 egg WHITES (do not use whole egg or the yolk will turn cookies orange)
    Red food coloring (about 12-14 drops, or until desired pink color is achieved)
    1 cup baking chips (dark chocolate, semi-sweet chocolate, milk chocolate, white chocolate or candy pieces like M&Ms)

Directions

    1 Preheat oven to 375 degrees (F).
    2 Cream butter and cookie mix. Add powdered sugar and flour and mix until well blended and crumbs are fine. Add egg whites and mix until well blended and mixture sticks together. Add red food coloring, several drops at a time, mixing after each addition until desired pink color is achieved and is uniform throughout the dough. Stir in chocolate pieces.
    3 With a 1-1/4" cookie scoop (or by rounded spoonful), drop cookies onto ungreased cookie sheet. Bake for 10 minutes, or until set but not brown. Allow to cool on cookie sheet for 2 minutes before removing cookies to cooling rack to cool completely.
